Fall farrotto dishes on Morello’s menu

The star ingredient at Morello Italian Bistro this fall on Greenwich Avenue is the ancient Italian grain farro, which will be incorporated into a variety of salads, soups and side dishes by chef Kevin Garcia.

Mr. Garcia recently shared his take on “farrotto,” a simple yet decadent dish using farro, cooked in the style of risotto.

“One of my favorite ingredients to incorporate into farrotto is Kabocha squash, commonly known as Japanese squash,” Mr. Garcia said. “The deep orange coloring is perfect for fall festivities, and the delicious flavor conjures up sweet potatoes and pumpkin.”

Looking for an original side dish to pair with the traditional offerings of turkey and gravy this Thanksgiving? According to Mr. Garcia, “Farrotto is the perfect Thanksgiving trimming for any chef, novice or experienced, since the grain is simple to cook. While rice can be overdone, farro is very forgiving. Guests will be impressed by the unique flavor and texture of the dish.”

At Morello, Mr. Garcia will offer diners a different preparation of farrotto each day, based upon the availability of seasonal ingredients. Some of his favorites include fall farrotto, featuring butternut squash purée, topped with cubed squash; winter farrotto, featuring gorgonzola, goat, parmesan and robiola cheese, topped with toasted walnuts; spring farrotto, featuring English peas, asparagus, fava beans and goat cheese and summer farrotto, featuring heirloom tomatoes, mozzarella, basil, chilies and marinara.

Recultivated in Italy, farro is becoming more widely used in the U.S. today due to the rising popularity of rustic Italian food. According to Mr. Garcia, Morello is one of the few restaurants in Connecticut to serve this Italian favorite on its menu.

There will also be additional specials offered for Thanksgiving. The restaurant will be closed on Thanksgiving Day, but on Thanksgiving Eve Nov. 27 it will be Family Pasta Night, with a special family-style menu for $29 per person. Customers can choose calamari or fried cauliflower and caesar salad or mixed greens, to be shared among the table to start. For entrée, there’s spaghetti with meatballs, lasagna bolognese or butternut squash ravioli and  a basket of Morello garlic bread on the side. Then for dessert there’s Morello’s famous mini bomboloni with chocolate sauce.

People shopping on Black Friday, Nov. 29, will also find a bargain at Morello with a one-day 15% discount off Morello gift cards. Gift cards are offered in any denomination and can be used in the dining room or bar – with no expiration date.
