Fleisher’s Craft Butchery, the leader in whole animal, sustainable butchery will open a brand new retail butcher shop and grab-and-go market at the end of September at 160 East Putnam Road in Greenwich. The shop will carry cuts of organic beef, pork and chicken, as well as house-made sausages and burger blends, all from animals raised humanely and sustainably on small, local farms in NY and CT. The market will have select produce and seasonal grab-and-go and provisions, such as piping hot rotisserie chicken, and Fleisher’s heat-and-serve foods such as meatballs, stocks and sauces. With a catering kitchen below the shop, the Greenwich location will also have a pick up, drop-off and on site catering service available for any occasion.
Fall Class Schedule: Fleisher’s has an in-depth instructional teaching program for all levels of cooks and aspiring butchers. This fall they have five, one-off Tuesday night classes at their Westport location (580 Riverside Avenue):
Sept. 22: Pork Butchery 101 -6-8 p.m., $100
A hands-on whole hog butchering experience where you will break down, bone out and skin subprimals of pork. After class, you’ll learn about sourcing, sustainability & labeling while enjoying some bites prepared by Fleisher’s culinary team.
Oct. 6, Sausage Making 101, 6-8 p.m., $100
As part of their Pig-to-Pork series, this class will teach you all about stuffing, twisting, and linking your very own sausage.
Oct. 20, Beef Butchery 101, 6-8 p.m., $100
Fleisher’s expert butchers will take you through an entire steer in this seminar covering sustainable sourcing, anatomy, and cooking tips.
Nov. 3, Lamb Butchery 101, 6-8 p.m., $100
In this class, you will learn about about Fleisher’s philosophy about sustainable butchery as their experts break down a whole lamb.
Nov. 17, Knife Skills and Poultry 101 with Victorinox Swiss Army, 6-8 p.m., $100
In this practical, hands-on class, you will learn the basics of handling a knife in your home kitchen, as well as tips and tricks for breaking down and carving the ultimate holiday bird.
Meat Stix Arrive in Stores Sept. 17: Fleisher’s is introducing their very own brand new Meat Stix! The Meat Stix are made from beef and pork, 100% grass-fed and anti-biotic free, as well as gluten-free, with no added nitrites, MSG, or soy. They will be available at the shops in Westport and Greenwich, and online via their brand new e-commerce shop at fleishers.com (launching next week). Sold in 2 oz packs of 2 sausages per pack, for $7.99.
Dinner at the Craft Kitchen: The Westport butcher shop has a full service restaurant which currently serves breakfast and lunch and will launch dinner service at the end of this month. The menu will reflect Fleisher’s commitment to sustainability, quality of ingredients, and seasonality and will use ingredients from the butcher shop right next door.
4th annual Porktoberfest: On Oct. 25, Fleisher’s will be hosting the 4th annual Porktoberfest in Westport. Dust off your lederhosen and get ready for a full day of whole-roasted pigs, flowing beer, homemade sausages, an Austrian band and more. This will be a family friendly event with plenty of non-alcoholic cider, s’mores and games for kids.
